Any wooden cutting surface should be cleaned with soap and water while holding water usage to a minimum as water is woods worst enemy. Never use a dishwasher to clean your board as this will certainly lead to cracking after an extended period of time. To mitigate water absorption we use Behlens salad bowl finish to season and seal the wood. Salad bow,l finish is food safe.
Gwen simply recommends wiping your cutting surface with a soapy rag, rinse it off, and then towel dry. At some point you may want to recondition your board to a like-new condition. This can be accomplished by simply sanding the surface with 100-grit sandpaper, wipe it clean, and re-oil with salad bowl finish.
